This Grade II listed building is now home to a modern hotel and conference centre.

The Minster Mill Hotel, Witney

The initial brief was to provide a hotel kitchen for the Grade II listed Mill House situated next to the Old Swan PH in Witney. The scope was then extended to include the Malt House function room kitchen and bar, the stills area and staff facilities.

The 2’ thick walls, sloping ceilings and different floor levels created design and technical challenges all having to meet with conservation and client approval.

Initial plans for the function room were dramatically scrapped when planning permission was refused for a large extension. The main hotel kitchen now had to accommodate conferences and wedding catering with a small regen area incorporated into the function room area.

The conference bar was tucked in front of a spiral staircase with specially fabricated curved work tops to maximise the workspace for staff. Due to the very tight deadlines, the intricate bar design led to the worktops being manufactured from CAD drawings with no time for templates.

Ventilation and ductwork routing was complex with the limitations of the Grade II listed building and the  client requiring the ductwork and vents to be hidden from customer view.
