
La Tua Pasta, Borough Market
The brief – to design a space capable of providing high volumes of takeaway pasta from a small and compact market stall.
Plans were initially conceived from architects drawings and, once on site, re-drawn to accommodate the unforeseen drainage, ventilation and Network Rail water ingress issues.
The client wanted one contractor to undertake the project – from initial design, building work, interior design, heating and lighting through to the catering installation.
To maximise space, the walls were constructed as thin as possible with a theatre style cooking facility located behind the serving counter.
Refrigerated storage was paramount as the uncooked pasta is prepared off site and delivered ready for cooking.
To comply with current regulations a separate wash up area had to be included along with the servery and hand wash facilities.
