The initial brief included both basement and ground floor kitchens, the lobby and main bar areas together with the wash up and a Grab and Go facility for hotel guests.
Located in the basement and ground floor of a new build hotel, services and basic floor layouts were completed and installed prior to the start of any catering design work.
Following the initial consultant led design, discussions with the client led to changes in the original specification of the bars to accommodate the bespoke Italian cladding ordered for all of the refrigeration. This was shipped directly from Italy to be fitted to the cabinets prior to installation.
Specialist shop fitted items were also supplied from Italy and close co-ordination with the manufacturer was key to a successful installation.
Modular cooking equipment from Exclusive Ranges provided extremely flexible, modern and efficient island cooking suites in both kitchens.
With the appointment of a new Head Chef the menu was changed and the main central island cookline line was re-designed to accommodate a large Roberta grill. Work flow was improved and the revised menu incorporated with little inconvenience.
