Working closely with Fullers Brewery the refurbishment of the busy riverside pub was scheduled to take three months. The kitchen, bar and dining areas were to be extended and a new galley kitchen with open pass-through servery installed.
With limited access to the old kitchen the existing equipment required dismantling to remove from site and was put into storage for cleaning, servicing and re-use where possible.
The new cookline was extended to incorporate a 5m Ambach suite with a pass counter with views over the whole length of the kitchen.
Ventilation required long ductwork runs, some passing through cupboards in a function room and a highly engineered noise and fume filtration system to meet the stringent local planning constraints.
